Merry Christmas Eve! Sneaking in an off brand post for you this week around the holidays. Unlike some of the women I\u2019ve featured in the Mom Series – check here<\/a> and here<\/a>, I am not a wizard in the kitchen. I don\u2019t claim to be a great baker or cook. My husband actually does the bulk of that in our family and for that I am so grateful!\u00a0<\/p>\n\n\n\n

But I do love making these cookies every year around Christmas time and I wanted to share the recipe here! Selfishly, I also need a place to archive this recipe so I don\u2019t lose it in the future! I already had to text my friend to get another copy of it this year. <\/p>\n\n\n\n

Ok, I promised I wouldn\u2019t do a huge introduction or share my whole life story before I shared the recipe like I see all the time on other recipe posts. <\/p>\n\n\n

One of my good high school friend\u2019s parents makes these cookies regularly. I used to love hanging out at their house and seeing a batch of these on the kitchen counter! Marty\u2019s cookies we called them. Or at least I called them that. I hope he doesn\u2019t mind that I use his name here. <\/p>\n\n\n\n

I participated in a cookie exchange probably 8 or 9 years ago and I knew then that I wanted to make these infamous cookies. Since that exchange I try to make these once a year. I don\u2019t think they are particularly a holiday only type of cookie. You could easily enjoy these year round. <\/p>\n\n\n\n

They are fairly simple to make.  The main caveat is they do take 2 days to make – you have to let the dough sit overnight. So some advanced planning is required! One thing I learned this year, and will not make the same mistake was subbing butter for margarine. The dough ended up so hard – it was a wrist workout to scoop out the 1 inch balls! Basically gave myself tendinitis. The cookies aren\u2019t quite as soft either. Just trust me, don\u2019t do that. <\/p>\n\n\n\n

Sandy, Marty\u2019s wife, also insists that you use semi-sweet chocolate chips. Milk chocolate chips will not do. I have never tried it – I always follow her expertise but just in case you are thinking you can make that swap – don\u2019t do it! Maybe I should be calling these Sandy\u2019s Cookies. <\/p>\n\n\n\n

These cookies are the real deal though – rich from the melted chocolate in the dough and the melted Andes mint on top helps cut the richness. So yummy.\u00a0<\/p>\n\n\n\n
